The name Rootstalk refers to rhizomes which are all connected via a complex underground root system. The name was inspired by the large stands of Aspen trees surrounding the community of Breckenridge. From old dormant roots, Rootstalk was opened in December of 2020 in a historic home on North Main Street in Breckenridge by 2024 James Beard Semifinalist Chef Matt Vawter and his team. The restaurant seeks to provide “Elevated, Everyday Dining” to the local community & visiting guests. The cuisine is ingredient focused, technique driven and deeply committed to quality at all levels with offerings from apre-ski selections to a curated, seasonally changing 7-course tasting menu paired with wines selected by Sommelier Madison Church. Rootstalk proudly works with Colorado’s best farmers, ranchers, and artisans to bring the highest quality experience to Breckenridge. Intentional sourcing is a hallmark of Rootstalk & Radicato’s values contributing to lasting, meaningful relationships with our purveyors & our community. Seasonality & availability of ingredients in the High Rockies furthers opportunities to expand our networks and collaborate with trusted partners outside of Colorado.
