The inspiration of our name comes in two parts. The first from suspirar, which means “to whisper”. And the second, from the Suspiro a la Limeña – a confection akin to the blancmange, originating from Spain, but has become its own as a staple dessert of Peru. Named by the Peruvian poet and author José Gálvez whose wife Amparo Ayarez first prepared the dessert, it is said to be sweet and soft, like the “sigh of a lady from Lima”. It is this sigh of pleasure and longing, as well as a whisper of something more, that characterizes the culinary experience Suspiro provides.
